Bruschetta ingredients
- French baguette
- Olive oil
- 8 oz fresh mozzarella
- Bunch of fresh basil
- 1 cup balsamic vinegar
- 3 Roma tomatoes, sliced
Directions
Make the balsamic glaze by simmering balsamic vinegar in a pan on the side burner of your Paradise Grill, for 15 minutes until it begins to thicken. Set aside to cool. Slice baguette into pieces about ¾ inches thick. Brush each side of 10 of the pieces with olive oil. Place on a medium-hot grill for 10 minutes, turning halfway through, until crispy. While the crostini are still hot, top each with a slice of mozzarella, a basil leaf, a slice of tomato, and another slice of toasted bread. Drizzle with balsamic glaze.
