Everybody loves watching a hibachi chef do his thing. The confidence that he flips his knife and spatula, the ease at which he quickly cooks the food in front of the group is mesmerizing. Now that can be you. Here’s how you can do some of the fun tricks that hibachi chefs do right in your own backyard while entertaining all of your friends and family.
The Onion Volcano. For this, you’ll need a medium or large white onion, a squirt bottle filled with vegetable oil, and a squirt bottle filled with 80-proof vodka. Slice the onion into 1-inch thick slices. You’ll only need one for the trick. Separate the onion slices but don’t push out every ring, instead, separate it into 5 or 6 rings, keeping rings inside intact.
Stack the slices from biggest to smallest on the hot griddle (or stack them off the griddle and move it to the griddle with your spatula) being careful not to touch the hot griddle with your hands. Squirt cooking oil through the hole in the top of the volcano (for about 2 seconds) and then squirt vodka in the hole in the same way (for about 3 seconds). Be careful not to spill any vodka on the griddle’s surface because you want the flame to be contained in the onion. Using a long grill lighter, light the top of the volcano. (Stand back!)
The flame should go out fairly quickly and smoke should come out but if it doesn’t, extinguish the fire by slowly moving the volcano to another area of the griddle.
Zucchini Toss. Another popular trick is when the chef uses his spatula to toss chunks of zucchini into the open mouths of guests. This is pretty straightforward you may want to practice before your guests arrive. Make sure that the zucchini is cut into uniform, bite-sized pieces.
Egg Toss. For this trick, the chef spins an egg on the griddle, slides the spatula under, tosses the egg in the air, and catches it without making a sound. This one takes practice too. If you don’t want to break a bunch of eggs while practicing, try using golf balls. Once you’ve mastered that, try tossing the egg in the air again and catching it with your spatula on its side so the inside of the egg falls onto the griddle while the shell remains on your spatula.
Hibachi Recipes
Hibachi restaurants are not just loved for their entertainment, they’re also known for their delicious foods. Here are some recipes that’ll make your guests think you’re a real hibachi chef!
Yum Yum Sauce is everyone’s favorite and it’s surprisingly easy to make at home.
Yum Yum Sauce ingredients
- 1 cup of good mayo
- 1 tsp granulated sugar
- 2 Tbsp of unsalted butter, melted
- ¼ tsp paprika
- 1 tsp tomato paste
- ½ tsp garlic powder
Put all ingredients into a small bowl and whisk until smooth. If you like it a little hot, add a pinch of cayenne.
Fried Rice ingredients
- ½ cup of chopped onions
- ¼ cup peas
- ¼ diced carrots
- 1 egg
- 2 cups of cooked and cooled sticky rice (or boil-in-bag rice works too)
- 1 cup zucchini
- 1 tsp sesame oil
- 2 Tbsp soy sauce
- 2 Tbsp butter
- 1 Tbsp olive oil
Saute onion, peas, carrots, and zucchini in olive oil for 2 minutes and push them to the side where the grill isn’t as hot. Do your egg trick, then scramble the egg for a few seconds. Add rice, butter, soy sauce, and sesame oil and mix in the sauteed vegetables. If you’d like, add some grilled chicken. Enjoy!
Making shrimp on the hibachi couldn’t be easier.
Hibachi Shrimp ingredients
- 1 lb of large raw shrimp, peeled and deveined
- 2 Tbsp of olive oil
- Soy sauce
- Sesame oil
Cook shrimp in the olive oil in a single layer on the griddle, about 2 minutes per side. Shrimp will turn pink and begin to curl when it’s cooked. Add soy sauce to taste, and drizzle with sesame oil. Serve with fried rice and Yum Yum Sauce.
